Coconut Flour Vanilla Cake

The following cake is perfect for almost any special diet. It's gluten-free, dairy-free, soy- and nut-free. It's also GAPS/SCD compliant and low oxalate. The texture is wonderful and the recipe is forgiving. You can add banana and make banana bread.

Coconut Flour Vanilla Cake

Ingredients

For 4 people

  • 1 teaspoon(s) sea salt
  • 0.67 cup(s) melted grass-fed ghee
  • 1 cup(s) raw honey
  • 8 pastured eggs
  • 0.5 teaspoon(s) baking soda
  • 0.25 cup(s) coconut flour

Directions

  1. Preheat the oven to 170 Degrees Celsius. Grease and flour two 8-inch cake pans. In a large bowl, combine the coconut flour, salt, and baking soda.
  2. In a medium bowl, whisk together the eggs, melted ghee, honey and vanilla extract. Blend the wet ingredients into the coconut flour mixture with a handheld mixer until thoroughly combined.
  3. Bake for 35-40 minutes. Once inserted toothpick comes out dry (a few moist crumbs), cake is ready. Let cook in pan, then cool on rack. Frost after cake is cool.

  4. Choose from either Cashew or Coconut Cream Frosting.

  5. Cashew Cream Frosting
    • 1 1/2 cups of cashews
    • 1 cup of water
    • 2 teaspoons vanilla
    • 7 dates
    • a tiny pinch of salt
  6. Mix all ingredients in the blender on high to whip into a thick cashew cream. Spread on cake, and top with fresh organic blueberries and strawberries.
  7. Coconut Whipped Cream Frosting
    • 1 container of Coconut Cream (see Wilderness Family Naturals)
    • 1 teaspoon honey
  8. Put the container of coconut cream in the freezer to chill but not freeze (20-30 minutes). Pour cream into bowl and beat with electric hand mixer for several minutes until stiff like whipped cream. Spread on cake, and top with fresh organic blueberries and strawberries.
