Chicken Schnitzel (GF/CF, Soy, Corn, Yeast free)

Chicken Schnitzel (GF/CF, Soy, Corn, Yeast free)


For 5 people

  • 700 grams Chicken breast
  • 1 tablespoon(s) coconut oil
  • 2 eggs
  • 0.5 cup(s) gf flour mix (chickpea, brown rice)
  • 1 cup(s) Casalare rice crumbs
  • 0.5 cup(s) desicated coconut
  • 2 tablespoon(s) vital vegie powder (optional)


  1. Sprinkle flour on a board or plate
  2. Mix Rice crumbs, coconut and vital vegie powder on a separate plate
  3. Lightly beat eggs in a bowl
  4. Cut chicken to your preferred portion sizes and roll in flour mix
  5. Dip each breast in the egg
  6. Roll the chicken in the rice crumb mix - ensure it is well covered.
  7. Place chicken in a preheated frypan with the oil.
  8. When the chicken is cooked on one side, turn it and cook the other side (try and only turn once)
  9. This mixture gives the crumb mix a golden and crunchy texture. 
  10. You can make nuggets out of these as well.
